The ultimate chocolate chip cookie!

Once a month I go to Bake club, a good excuse to eat lots of baked goods and chat :) The theme this month was chocolate, and as I not a big fan of chocolate bakes (I know must be one of the only ones) I do like a good chocolate chip cookie!

On a quest to bake the best chocolate chip cookie I came up with this recipe, a sandwich cookie with a marshmallow creme filling, and its delicious!! 

Marshmallow gooood, chewy biscuit goooood, sandwich cookie that you can take apart and nibble, goooood :D All and all a perfect bake for the weekend!

 

To make the cookies:

  • preheat the oven to 175C
  • mix 170 gr of room temperature butter with 100 gr brown sugar and 60 gr caster sugar until creamy, I use an electric mixer for this.
  • add 1 egg and 2 teaspoons of vanilla extract and mix well
  • add 300 gr self raising flour, 20 gr corn flour, a pinch of salt and 180 gr chocolate chips. I do this by hand, and mix together into a soft dough.
  • As these are sandwich cookies I like to keep them small, make a little ball, ping-pong ball size, line a baking sheet with baking paper and flatten your dough balls slightly. Leave space in between your cookies on the baking sheet as they will spread.
  • Bake for 8-10 minutes, when you take them out of the oven they will look slightly under done. Leave them on the baking sheet for 5 minutes before moving them to a wire rack, if you move them before they will crumble. Let cool completely.

For the filling:

  • Mix 100 gr softened butter with 150 gr icing sugar, 2 table spoons milk and 1 teaspoon vanilla extract with an electric mixer until light and fluffy.
  • Let 150 gr marshmallow melt in the microwave in a bowl, this takes between 20-40 seconds on full power. keep an eye on it not to burn.
  • Add the melted marshmallow to the butter creme and mix for a minute.
  • Let the filling rest in the fridge for 10 minutes and pipe it on half of your cookies, top with the other half and enjoy!

If you don't fancy the marshmallow filling you can of course just bake them as chewy chocolate chip cookies, just as nice. I made these a bit bigger, say golf ball size and flattened them with the palm of my hand before baking.
